To change difficulties in the middle of a game, get to the level you want to be on, then die and select NO when asked to continue. Write that password down. Now go to password and enter your password exactly like you wrote it down except change the color of the 4th and 8th character to 1 color higher. (i.e. if the 4th color was red change it to blue.)
