Leveling up costs Gold, so in doing so defeat as much enemies as you can. If you get stuck on a boss battle and can't defeat it within the thirty second timelimit then time to start farming for gold.

Take yourself back a level or however many levels back you feel comfortable with and farm gold there while in-game.
Stay in the boss level, close your game session out completely (as the game's mechanics work even while you're not playing the game).

Doing this will allow your characters to defeat monsters in previous levels while you are still offline but in the boss level when you go to reopen the game. Staying in the boss level in-game and not being able to defeat it will just soak up your time without any rewards.
