At night instead of going to bed, stand by the water with a pumpkin on your head. Endermen can't see you until you kill them, thanks to the pumpkin head. Use the pumpkin technique in the end and you will not be attacked by endermen so you can focus on the dragon. Later you can hunt endermen.
