After you've won a match in VS mode, your character will be shown against a black screen, performing one of three random celebration actions. By holding either 'B', 'Y' or 'X' immediately after the match has ended, you can control which victory screen is shown. For example, to see the spinning sword motion as Roy, hold the 'Y' button..
