Tap when the dial is in the middle area of the color. By doing this, you have a short amount of extra time to see what the next color will be, then tap at the correct moment if it is the nearest one. This gets increasingly more difficult as the speed gets faster.

On older devices you can try to have as many apps running in the background as possible to intentionally slow down its performance.
